"My Go To" Knives

I have two 5", and one 7" Classic Santoku's that serve nearly all my needs. The 7" serves as a slicer, chopper and pairs up with an antique stag handled fork at the table to handle all sorts of roasts, steaks and briskets. The 7" also serves for the heavy prep work, even light chopping. The 5" knives handle a majority of the prep work, even stand in as paring knives. They do get over worked, but stand the heavy duty use very well. The chrome steel in these knives holds an edge very well, and comes back beautifully with nothing more than a few minutes work on a fine diamond stone, (keep the angle low and a light stropping on leather or a pair of Carhartts will keep it scarey sharp), it is also virtually stain free. Handles on these knives are just right for my medium to largish hands, the forged bolster adds a nice look and feel without hindering sharpening, my sons and bride , who have smaller hands, find them comfortable as well. Take reasonable care of these knives and they will serve you well. Keep them sharp, don't throw them in the sink, wipe them down and learn how to sharpen, find a good fine stone or diamond and learn how to use it. I am not a professional chef, however I do handle the BBQ, grill and smoker for groups of 30 plus, a couple of times a year. These knives are everything I have ever needed.
